Southwest take on the Philly Cheesesteak

Ingredients

Sirloin steak
Stubb's Chile lime rub
Salsa
Queso Fresca
Favorite crusty bread
Sliced Onion
Sliced Bell Pepper
Crushed fresh Garlic
Olive Oil

Instructions

Rub steak with a generous amount of the steak rub and set in fridge covered for at least 1 hour (overnight if possible)

Grill steak over a high heat to desired temp.

Slice open crusty bread and brush with oil. Grill until warm and grill marked.

Pull off grill and let sit for at least 5-10 minutes.

Slice steak thin and toss in skillet with olive oil, onion, pepper, salsa and garlic.

Top the grilled bread with steak mixture, cover with Queso Fresca and broil until cheese is melted and browning. Finish with additional salsa and a squeeze of lime if desired.

Notes

this is a great sandwich, especially for out of towners. No wrong way to create this recipe!
