Ingredients:
Stubb's Rosemary Ginger Rub
1/8 cup sliced garlic cloves
½ cup extra virgin olive oil
1/8 cup fresh lemon juice
1/8 cup fresh lime juice
1/8 cup balsamic vinegar
1/16 cup fresh orange juice
1 sprig fresh rosemary
4 whole peppercorns
6 (8 oz.) pieces swordfish
Instructions:
Sauté garlic slices in olive oil for 1 minute. Remove
from the heat and let sit for 10 minutes. Add all of the remaining
ingredients except the fish. Let the marinade cool then add
the fish.
Marinate
for 6 to 8 hours, refrigerated. Remove fish from marinade
mixture. Shake Stubb's Rosemary Ginger Rub on fish along with
salt and pepper to taste.
Preheat
grill. Grill the fish on both sides until cooked through.
